Charlie Shew is the Chef de Cuisine at Graffiato Richmond. He started as a line cook in May 2016 and worked his way up in the kitchen to become the fresh new face of Graffiato Richmond’s small plates menu. Charlie studied at Johnson & Wales Charlotte and worked at Coquette Brasserie in Raleigh before moving to New York where he worked at Grammercy Tavern under James Beard Award-winning chef Mike Anthony. After leaving NYC, he worked at Meridian in Winston-Salem before coming to Graffiato and rapidly moving up the ladder to Sous Chef for the past year and a half. As the new Chef de Cuisine, Charlie is now able to share his creativity and passion for the flavors of the Mediterranean with Richmond’s burgeoning dining scene.
